Delicious Creme Caramel Recipe

Today I will be sharing a Creme Caramel recipe with you.  This is a very common dessert in France and in various European countries, kids love it.

I always bought my creme caramels from the shop or supermarket but one day I had too much milk at home and decided to give it a try. It’s very easy to make and does not take long. They also keep in the fridge (once they are cold cover with cling film) for a few days so it’s a good dessert option for an informal lunch or even a dinner party.

I doubled the recipe as I wanted to give some to my neighbours, I have used ramekins to make these but you can also use a large bowl

For the Caramel

110g sugar

2 tablespoons warm water

For the Custard

4 large eggs

500ml of gold top milk (you can use a mixture of cream and milk – the more cream the richer the custard will be, I find it nicer made with milk)

1 teaspoon pure vanilla extract

40g sugar (the recipe says brown but I used white)

 Make the caramel in a small pan, I put the sugar with a little water as it’s easier to make that way and does not change the result. I probably put one or two spoons of water and then put the pan on high heat. You need to stay with the pan as it won’t take long. You can tell when it will start turning as it becomes quieter (it’s difficult to explain but once you have done it a few times, you will understand what I mean). Do not let the caramel go too dark as it will take burnt.

Take away from the heat and put 2 tablespoons of warm water in the caramel. Be careful as it may spit.

Pour a little caramel into each ramekin or use a large soufflé dish.

 Pour the milk into a pan and leave to heat gently while you whisk together the eggs, sugar and vanilla extract in a large bowl.

Then, when the milk is steaming hot, pour it onto the egg and sugar mixture, whisking until thoroughly blended.

Pour the liquid into the caramel lined dishes (or dish) and place in a roasting tin.

Transfer the tin carefully into the oven, the pour cold water into it to surround the dish up to two-thirds in depth.

Bake for approx 1h if in the large tin or between 20 to 30mn in ramekins. The custard should feel firm and springy to the touch.

Then remove from the roasting tin and, when it’s completely cold, cover with clingfilm and chill thoroughly for several hours in the fridge.

You could say but I find creme caramel more softer in texture

It is delicious! You can use vanilla essence if you can’t get paste.
