
Cake Aux Olives or Olive Bread is a tasty savoury cake and makes a very good “aperitif” as we say in France. My sister makes it quite a lot as it can be served sliced with drinks or you can always put it out when you have a buffet.
This cake can be made the day before but obviously it is always better when made fresh.

I made this recipe for vegetarians therefore put peas instead of the ham. You can really put anything in there that you like as long as you keep to the quantities.
It is pretty much a batter and not a dough and it quite watery so don’t worry, it will cook nicely into a cake. I used a loaf cake tin. As an alternate, you could also make it with sun dried tomatoes and feta (or mozzarella).

Ingredients
150g pipped green olives
250g roast ham (I used 250g peas as I needed this to be vegetarian)
150g comte (I used cheddar as I only had the very old comte I brought back from France)
4 eggs (I used large)
150g plain flour
4 tablespoons of oil
150ml milk
1.5 teaspoon baking powder
Salt and pepper

Method
Pour some boiling water on the olives to take some of the salt out, rinse them, drain and then cut them in halves. Cut the ham and cheese into regular small cubes.
Pre-heat the over at 180C
Put the flour, baking powder and salt into a mixing bowl, make a well in the middle, add the 4 eggs and milk to get a smooth batter.
Add the oil, olives, ham and cheese. Mix and add pepper
Pour into the baking tin and bake for around 1.5 hour

Oh this sounds interesting. I have a weird relationship with olives – I like them but I also don’t. But this is a nice idea for a bbq.
You won’t taste them in the bed especially if you chop them smaller
