Cornwall Pasta is a British-made (Cornish to be exact) pasta company that has a lovely range of dried pastas for you to choose from, all made with Organic ingredients. Not only are you buying British, but you’ll also be eating something that is much kinder to the Earth and your tummy!

What we thought of Cornwall Pasta

We were very generously sent a box of goodies which contained six varieties of their dried pasta. Amongst some of them were Wild Garlic Campanelle, Cornish Saffron Mafaldine (I had never heard of this shape), Basil Capanelle and Chilli Pepper Lumaconi.

For this post, I decided to cook a variety of meals using the different pasta from Cornwall Pasta that could be used for Valentine’s Day, which is taking place next week. These are quick and easy meals to prepare and are perfect for busy people and families, couples or even as a meal for one. Because everyone loves a comforting tasty pasta dish!

The first recipe has been developed by Cornwall Pasta and it’s a really straightforward quick to do and tasty dish, using crème fraîche and cheddar cheese. My three children quite like this dish, although they found it unusual to use crème fraîche as a base rather than regular cream. I think you could probably swap either or to suit your taste and I think in the future we would probably use regular cream with the cheese to make it like a quick and easy, macaroni cheese style sauce that’s done in minutes.

The second dish is a favourite of my daughters. She often puts this dish together when she makes a meal for herself so we’ve compiled the recipe so that you can make this at home. It’s a quick and easy tomato sauce with a bit of added cream, yoghurt or crème fraîche, depending on what you have to hand with a handful of cheese. We also had a few herbs and spices for a bit of extra taste. But if you fancy changing the recipe we have provided – you could add in whichever herbs you fancy, depending on what you prefer.

Our third dish is a slightly spicy one that would pair perfectly with some white wine. I would say this is the perfect one for a couples recipe. In this dish, my husband made a simple chilli sauce, that’s made with fresh chillies, lime, or lemon juice, red onion a dash of vinegar and some salt and pepper. This works as a fresh and spicy-tasting pesto that can be mixed in with your pasta at the end before serving.

Finally, the fourth dish is probably the most complicated but potentially the most unusual. This dish is created using leftover sweet potato mash, if you don’t have any leftover you can make this quite quickly by boiling the sweet potato and mashing it, leave to the side until you’re ready to create this sauce which also uses some tasty stilton cheese, tomato puree and garlic.

 

Cornwall Pasta Review

Recipe One (two servings – double/triple up etc the recipe as you need)

175g of Wild Garlic Capanelle or the Basil pasta
150g of crème fraîche
150g of your favourite cheese grated

Cook the pasta for 6 minutes of medium heat, drain, and then stir in the crème fraîche and cheese add salt and pepper to taste and even a little juice of lemon for some extra zing

Recipe Two (one serving – double/triple as required)

75-100g of Basil Capanelle pasta
2 tbsp of tomato puree
4 tbsp of double cream, crème fraîche or plain Greek yoghurt (the latter being my daughter’s go to)
1/2 a garlic clove pureed
1 tsp of mixed herbs or herbs of your choice
2-3 tbsp of pasta water to loosen the sauce

Cook the pasta as directed on the packet – don’t be tempted to add more pasta like we did – thinking surely this can’t be enough – as with it being such nice quality pasta it’s much thicker and fuller than general supermarket pasta.

Then once cooked drain and leave enough pasta water in the bottom of the pan (the same one you used to cook the pasta) add in the rest of the ingredients and cook until it’s all melted into the pasta fully heated and serve. You can sprinkle parmesan or any cheese you like on the top or leave it as it is!

Recipe Three (two servings)

The Chilli sauce
3 chillies
1/2 red onion
Juice of one lemon
Splash of apple cider vinegar
Salt and pepper

Blend all this in a tabletop blender and set aside

Cook 175g of pasta which-ever you choose – apart from the Chilli one (as this pasta is already super spicy) – then in a pan fry off one clove of minced garlic and some olive oil – then get some of your chilli sauce and add it to the pasta with additional salt and pepper to taste.

This is perfect with a chilled glass of white wine or if your alcohol free a mildly flavour Kambucha.

Recipe Four (my personal favourite) serves two

4 tbsp of mashed sweet potato
2 tbsp of tomato puree
1 minced garlic clove
200mil of water (to loosen the sauce)
salt and pepper

We choose to cook this with the Cornish Saffron Mafaldine pasta. When cooked it turns out like little petals and is perfect to trap all the sauce

We were impressed by all the pastas we received. They are all easy to cook and mostly have a mild delicate flavour apart from the Chilli one that really packs a punch. We were able to use them in all the recipes above and they tasted so yummy. I will definitely be buying these again. I also love that they are organic and use all organic ingredients that are locally sourced and grown within the UK mostly Cornwall.

We’re big pasta fans in our house so these sound so interesting, esp as they’re flavoured. The garlic one especially sounds really good as we always add so much garlic into our pasta sauces x
