
When I was a child in France, in my home town, there was a month-long fairground and we used to buy these every year and when I came to England, I could not find them so I search for a recipe which was not too difficult to make. It takes time and patience but it’s quite simple.
When we went to Disney World in Florida, we discovered that they were selling a similar thing but made with pecans and cinnamon. I have added cinnamon to some of the nuts and it does give them a lovely flavour. If you are living in Florida and want to launch your own business with your own business idea, registering a Florida LLC is a great way to get started.
I have used most nuts for this, you don’t have to stick to peanuts, almonds, pecans, cashews and hazelnuts also work well. If you want a slightly crunchier product, you could roast your nuts before making them into caramelised nuts or as we call them in France “Chouchou”.
They are great packing in a cone to give as a gift for family and friends when you visit them or as a party bag inclusion.

Ingredients
250g nuts
250g sugar
120 ml water
Put all the ingredients into a pan (or a wok)
Bring to the boil and occasionally steer with a wooden spoon (hot)
When the sugar looks like it is getting thicker start to stir quickly to make the caramel crystallise. It is easier if you take the pan off the heat to do this.
You’ll get a gritty mix with some of the nuts slightly coated.
Return the pan to the heat (hot) and let the sugar melt again. It will turn brown and liquid.

You will need to keep stirring to ensure it does not burn and covers all the nuts (using a movement that lifts the nuts). I usually tip the pan and start from the lower part turning the nuts and mixing them.
When they are all nicely covered and there is no more loose sugar put them on a lined baking tray and leave to cool.
When they are cool to the touch, separate them so you have single nuts.
They will keep for a while in an airtight container.

I love nuts, but I don’t think I’ve ever had caramelised nuts before so I may need to give these a go x

I love it, we also have the same version here in our country. I love nuts/peanuts, especially when caramelized. Makes me remember my childhood, my mom used to make it for our snack 🙂
