
Yet another really nice biscuit, which keep for a while in an airtight biscuit tin!
My granddaughter has ordered these biscuits, as she cannot wait for the Christmas baking session. She normally shares these with her paternal grandfather.
They are easy to make but difficult to handle, as the dough is pretty sticky. It’s better to refrigerate them before baking so they do not spread quite as much.
The nuts in the biscuits are optional therefore can be made for people with nut allergies.

Ingredients
340g plain flour
125g butter (I use whatever I have at home, either salted or unsalted)
370g soft brown sugar
1 tsp vanilla essence
2 eggs
60g dark chocolate, melted (I used 70% min)
80ml milk (I melted the chocolate in the milk, in the microwave about 20s)
2 tbsp cacao powder
2 tsp baking powder
¼ tsp ground allspice
85g chopped pecans (I did not have any pecans so I put chopped almonds)
Icing sugar to coat

Method
Beat the butter, sugar and vanilla until light and creamy.
Beat the eggs, one at a time.
Stir the chocolate and milk into the butter mixture.
Add the flour, cacao, baking powder, allspice and a pinch of salt (only if you used unsalted butter) and mix well.
Refrigerate for at least 3 hours, or overnight.
Preheat the over to medium 180C.

Roll teaspoons of mixture into balls and roll each in icing sugar to coat.
Place well apart on the lined baking trays to allow spreading.
Bake for 20-25mn, or until lightly browned and just firm.
Leave on the trays for 3-4 minutes, then cool on a wire rack.
Store in an airtight biscuit tin – they will keep for about a month.
