My German colleague’s mother gave this recipe to me back in the late 1970s. I have been using this recipe for a long time now and it always goes down very well. Her recipe was with apples but I have made it with various fruits and berries, either fresh or frozen.
It’s made by the all in one method and is an easy cake to make when you have unexpected guests if you have frozen fruits at home.

It’s lovely served as is or with pouring or whipped cream, custard (if you have the cake still warm) or with vanilla ice cream.
I made a very large cake but here are the ingredients for the normal size. I normally use a tin that measures approx. 39cm x 27cm.

Ingredients
300g butter (or margarine)
300g sugar
350g Self Raising Flour
4 eggs
4 to 5 large apples
Sugar and cinnamon (topping)

Method
Mix all the ingredients until you have a soft dough.
Put the dough into a lined baking tin (with high sides), there will only be about 2cm of dough in the bottom of the tin
Place the ¼ apples (round side up) onto the dough but don’t push them into to dough.

Pre-heat the oven at 190C
Sprinkle sugar and cinnamon (to taste – I like a lot of cinnamon!)
Bake for around 50 to 60mn (I could be golden brown)
