Austrian Apple Strudel Recipe

If you are looking to #bake something comforting and warming this fall then why not try my Austrian Apple Strudel Recipe.  On my mum’s side of the family, I have some Austrian cousins whom I visited often. They live near Salzburg and over the years have given me some family recipes. Both Apple Strudel and Topfen Strudel (this one is made with Quark cheese) are some of my favourites.

Ingredients

Dough
250g plain flour
1 egg
1 pinch of salt
20g butter
½ glass of water (approx. 125ml boiling water)

Filling
70g of sugar (I don’t normally measure it as check the sharpness of the apples)
50g of butter x 2
1kg of cooking apples
100g raisins (I don’t put them in as a lot of my friends don’t like them, the strudel is still very nice)
Cinnamon

Austrian Apple Strudel Recipe

Method

Make a well in the flour, add the egg (mix a little), salt, 20g of butter in the ½ glass of boiling water and pour it in the middle of the flour.

Work into a dough, it should be soft but not sticky.

Warm an empty pan (it should be quite hot) and cover60 the dough with the pan (ensuring you do not touch the dough with the pan) leave to rest for ¼ hour.

Put a large tea towel on a table (it makes it easier to roll out) and flour it.  Put the dough in the middle and roll it into a large rectangle.  Melt some butter and spread it over the whole dough. Stretch further if not thin enough.

Put some thin slices of apples all over the stretched dough, spread the raisins (if used) and add some sugar and cinnamon (there should be quite a lot of cinnamon).

Form a roll (using the tea towel to help you to move it) and spread some melted butter on the whole surface of the roll.
Put the cake in foil securing it well and bake for one hour at high temperature (around 180C – 200C fan).

Serve with some whipped cream and sprinkle each piece with some icing sugar.

My Uncle was a baker, from Czechoslovakia. He used to make an apple strudel that was very similar to this one! It was so good!

That looks absolutely incredible – and I can just about smell it. And it only calls for the most basic ingredients – as most traditional Austrian or German recipes do. Well done. Will have to make this – also without raisins 😉
