
I discovered this recipe on my very first visit to the UK. A lady brought some as a welcome and before she left, I asked her for the recipe. I have been making them for over 40 years and they have always turned out great and most people like them. They are easy to make and most people will have the ingredients in the house so if you have unexpected guests turning up, they can be made in no time at all.
It’s also a good recipe to make with children, they may not like fruit but I am sure they would enjoy them with chocolate chips or fudge pieces.
Ingredients
250g Self Raising Flour (if using plain add 3 level teaspoons of baking powder)
125g margarine or butter
125g sugar
125g of mixed fruit (or whatever you feel like putting in – I very often make them with dried cranberries, cherries or blueberries – you can also make them with chocolate chips or you can leave them plain and add some jam in the middle before baking) I did 3 different options to show what can be done.
1 or 2 eggs
little milk (if needed)

Method
- Put the flour and margarine into a bowl, rub until the mixture resembles breadcrumbs
- Add the sugar and the dried fruit
- Stir in the egg (make sure you don’t put too much egg as the mixture should not be wet, it should not be like a dough (see above photo)
- Take small portions of the mixture between two forks (I usually use my hands it works just as well)
- Space them onto a greased or lined baking tray
- Bake for 12 to 15 minutes at around 200 C
- To make the plain ones or the one with jam, do not add the fruit.
They are better eaten fresh but will keep for a few days in an airtight biscuit tin.

My mum loves rock cakes so I might just have to get the kids to help me make these and drop them off on her doorstep! Would be a lovely treat – these look great.
These were super easy to make, perfect for little hands as well.
Oh, we haven’t made rock buns for ages – my last attempt didn’t go to well so I think it put me off. I’ll have to get the children to help me make a batch
My daughter made these on her own and she is only 9 so I am sure you can get your kids to help you with this
I love Rock cakes, ever since i was little, i often find these can vary in quality and can turn into many weird variations of sponges, and biscuits etc…but when people get it rock, they can be lovely, the recipe looks great.
