Afternoon Tea Cake Recipe - Rocky Road

Rocky Road originates from Australia, it’s a no-bake recipe so very easy to make with kids. It is claimed that it started being made to sell confectionery which had spoiled during the long sea journeys from Europe, they also added cheap local chocolate and nuts.

This recipe is based on all the recipes I found on the internet. They all have some chocolate and some butter and a load of other things in it, these are really up to you but I tend to add marshmallows (I cut large ones into small pieces as I don’t always have small ones at home). Depending on who I am making this for, I add nuts or coconut but I always put broken biscuits, I brake the biscuits very unevenly as it is nice to have the odd large piece in the Rocky Road.

Just use your imagination or think of the things you would like in there, there is no limits, you could always use cut up chocolate bars or fudge or toffee!

 Ingredients

500g of 70% chocolate (or if you prefer a mixture of milk and dark)
150g of butter
I put a full pack of digestive biscuits in mine (300g approx – not sure of the exact weight as I ate one before starting!)
5 large marshmallows (the ones you use for toasting)
1 small bag a small pieces of fudge
1 couple of cups of homemade popcorn
1 couple of tablespoons of coconut
Some chocolate chips on the top

Method

Melt the butter and chocolate in a dish in the microwave (I use the defrost setting – make sure you do it in stages to ensure you do not overheat the chocolate)

Prepare a large tin with some baking parchment

Get all the other ingredients ready in a very large bowl.

Mix in the chocolate and butter

Put in the prepared baking tray

Leave to set in the fridge for a couple of hours or preferably overnight – that may be impossible if you made it with kids!
