Baking Basic 101: Sweet Pastry Recipe

I have used this recipe for a long time now and it is usually fine. I am a lazy baker therefore never sieve the flour (we no longer need it as we don’t have to worry about little bugs in the flour, that was the reason they did it and not to put air in the flour as soon as you put your spoon in it, the lumps are back).

The quantities are easy to remember, you need 1x flour, 1/2 x butter and 1/4 x icing sugar and some egg to bind. I made a large quantity as it can be kept in the fridge for a few days or in the freezer for a very long time. The quantities I used will make 3 very large tarts. My tins are 26cm in diameter. Why make something small when it does not take long to make a large one. It is always great to share it with friends or neighbours.

Ingredients

500g plain flour
250g unsalted butter (soft)
125g icing sugar
1 used 3 medium eggs – make sure you do not add too much otherwise your pastry will too wet

Method

I use a mixer and put all ingredients in and mix until I get a crumbly dough.
I finish it on the work surface, it helps to see if there is any more liquid needed (milk or water would be fine if required)
I kneed it until I get a nice smooth dough.
You can rest it if you feel the need but I am always in a rush so I don’t except for certain types of tarts.

I always used to make my own pastry both sweet and puff, but these days I buy ready made for convenience. My Grandad was a baker and made the most amazing pastry, he never shared his recipe but I know he put an egg in it.

OH this looks so delicious. I get put off making pastry as its tricky and my skills don’t stretch that far! Perhaps, i should practice more.

I’m lucky that I have nice cool hands, so I can make pastry pretty well, but I always mix by hand. Not sure why I make it harder for myself! lol

It’s shameful but I don’t think I’ve ever tried to make my own pastry before. I really need to give it a go and stop getting shop-bought stuff all the time x
