
Afternoon Tea Cake Recipe : Custard Tart
Are you looking for baking inspiration on what you can bake to enjoy with you family and friends? Why not try this Classic Custard Tart recipe. These were made recently as I had some sweet pastry left over from some tarts I made a few days ago.
The recipe is from a book by Marguerite Pattern which was first published in 1973. I got an edition which was published in 1976. If you are wondering, Hilda Elsie Marguerite Patten CBE, better known as Marguerite Patten was a British home economist, food writer and broadcaster. She was one of the earliest celebrity chefs who became known during World War II thanks to her programme on BBC Radio, where she shared recipes that could work within the limits imposed by war rationing. She sadly passed away aged 99 in 2015 and has been known to have inspired many chefs and bakers.
The Custard Tart is sometimes confused for Pasteis de nata or Portuguese Egg Tarts. While both are delicious custard desserts, the Portuguese egg tart has a flakier crust and a more caramelized top, setting it apart from other types of egg tarts.

Ingredients
5-6 oz Sweet Pastry (140-170g)
2 eggs (I have used 1 egg and 1 yolk)
1-2 tbsp sugar
1 tsp vanilla
1/2 pint milk (275ml)
Method 1 – Makes 1 Large Tart
Line a flan tin with pastry
Brush with egg white to prevent it from rising
Pour in egg custard mixture
Bake for 35 to 45 minutes in moderate oven, 160C
Top with grated nutmeg

Method 2 – Makes individual Tart
Line deep patty tins with pasty
Brush with egg white to prevent it from rising
Pour in egg custard mixture
Bake for 10 to 20 minutes in moderate oven, just above the centre tray, 170C
Top with grated nutmeg
Note: You can opt to blind bake the pastry first if you prefer, I have baked the pastry and custard together.

I do love a custard tart but have never made them myself. I do love an afternoon tea and these would be a great addition, although I’m usually lazy and buy all the cakes ready made. Next time I’ll have to try and do it all myself x
