Traditional French Tarte Aux Pommes Recipe

What can I say about this easy recipe, it was my mum’s and aunties’ stand by recipe. A tarte is a very easy and commonly served in any French home and is called Tarte Aux Pommes.

There is very little pastry and lots of fruits so I suppose it could count as your five a day.

My grandma had a large garden full of fruits so tartes were made as a dessert when we had family meals or with a cup of coffee in the afternoon for what we call “gouter”.

If you are unsure about making pastry, just buy either puff pastry or any other pastry in the shop but ensure you get the best one which is usually made with butter.

I usually use a large metal flan case (it’s easier to take out if you have a loose bottom) I think mine must measure around 26cm

Ingredients

Plenty of apples (Bramleys are best but cox or russets will also work)

Sugar

If you want to make it like we do in Lorraine and Alsace you will also need for the large tin. Reduce accordingly for a smaller tin.

3 eggs

300ml double or single cream

About 2 tablespoons of sugar

Peel and core the apples and cut them into quarters. Now you can either do them really thinly or cut each quarter in 3 or 4 pieces.

Place on the pastry as shown in the photos.

Mix the egg, sugar and cream and pour on the tart

Place in a pre-heated over at 190C until golden brown, the apples should have a line of colour at the top.

You can make this with most fruits such as plums, apricots, bananas (slice the bananas and sprinkle with sugar and lemon juice) and blackberries.

I think cutting and placing the apple takes some effort otherwise it is a fairly simple recipe
