
I was first introduced to Pecan Pies back in the late 80s when I worked in the USA when my colleague gave me a recipe after I tasted a piece of pie in a restaurant. I used to buy the Karo Corn Syrup from the States as I was there at least 6 times a year and always had enough space in my luggage to bring back food stuff you could not get here in the UK at that time but a lot of the items I used to purchase are now available locally. I tend to put a lot more pecans than stated in the recipe as I am not a fan of the sugary filling. For me it’s far better with lots of pecans.
I always chop the pecans as it makes it easier to cut the pie but if you like big pieces of nuts, you can leave then whole. I also put a row a pecan on the edge of the pie to make it look pretty!
If you can’t find Karo or corn syrup, you can substitute it for maple syrup or golden syrup. I have tried using both and they both work but I prefer maple for the taste but it’s a little more runny therefore the pie may not set as well but it’s still taste fine.
It’s really nice served with some good vanilla ice cream or some whipped cream but can also be eaten on its own.
The recipe I used is the one my colleague found on the back of the bottle of syrup and it’s a good one, very easy to make. I use American cups for this recipe but I have included a metric measurement.
You can use the sweet pastry recipe from my earlier post or any shortcrust recipe if you prefer.

Servings – 8
Ingredients
1 cup of syrup (350g)
3 large eggs
1 cup of sugar (200g)
2 tbsp of melted butter
1 tsp vanilla extract
1.5 cup of pecan (180g) but I usually put at least 4 cups of chopped pecans in my pie
Pastry for a 9 inch deep pie crust

Method
Stir the first 5 ingredients thoroughly using a spoon
Mix in the pecans
Pour into the pie crust
Bake in the centre rack of the oven for 60 to 70 minutes.
Cool for 2 hours
Store pie in refrigerator
Tips
Bake in pre-heated oven at 175C for 60 to 70 minutes. Pie is done when the centre reaches 93 C. Tap the centre surface of the pie lightly. It should spring back when done. For easy clean-up, spray pie pan with cooking spray. If pie crust is over-browning, cover edge with foil.
