Homemade Strawberry Jam Recipe

As the golden days of summer slowly start to fade and the first hints of fall creep into the air with the cold, there’s one sweet reminder of the season still bursting with flavour: strawberries. If you’ve found yourself with a surplus of these juicy red gems, whether from your garden, the farmers’ market or a generous neighbour, don’t let them go to waste. Now is the perfect time to roll up your sleeves and turn those berries into a homemade Simple Strawberry Jam Recipe to keep throughout the winter season.

Strawberries, with their vibrant red colour and sweet-tart flavour, are a staple of summer. Not only do they taste delightful, but they also boast numerous health benefits. Rich in antioxidants, vitamins, and minerals, strawberries can boost heart health, improve blood sugar levels, and even enhance skin health. This makes them a fantastic choice for making homemade jams, as you’ll not only enjoy the taste but also reap the nutritional benefits throughout the winter months.

I had some strawberries that I left in the fridge for a little too long and they did not look as good as I wanted to eat as a fruit. I therefore decided to make strawberry jam for my grandson, Simeon.  Strawberry jam does not set very well so I always add some pectin or use jam sugar which contains pectin. If you are using pectin, remember to add the lemon juice as it help the pectin to work. I’ve made a small portion for this recipe as it is easy and quick to do.

Although strawberry jam is not my favourite jam, it is still great with toasted bread, crumpets or as a delicious topping for scones.

Making a homemade Simple Strawberry Jam Recipe is not only a delightful way to preserve the taste of summer, but it also brings a sense of accomplishment. The process of canning your own jam can be incredibly rewarding, and it allows you to control the sweetness and flavour. You can experiment with various spices or even add herbs like basil or mint to create a jam that’s uniquely yours. Plus, homemade jam makes for wonderful gifts, especially when presented in a beautifully labelled jar.

Here are the ingredients

1kg strawberries hulled

750g sugar

6g of pectin

50ml of lemon juice

Method

Cut and quarter the strawberries, put them in a jam pan (or any large pan), add the sugar with the pectin (mix well) then add the lemon juice.

As you begin the cooking process, it’s essential to stir the mixture frequently to prevent it from sticking to the bottom of the pan. Once the sugar has dissolved, you can increase the heat until the mixture begins to boil. This is when the magic happens; the strawberries will break down, creating that luscious jam consistency we all love. Remember to keep an eye on the clock; the cooking time can vary depending on the ripeness of your strawberries and the amount of water they release.

I tend to mix the sugar and strawberries and then leave them for a couple of hours to mix and the fruits to give juice. It’s easier if you do it this way but if you want you can cook it without that step. Bear in mind that the sugar will need to dissolved  on a low heat to start the jam.

Cook until when you test it on a cold plate you get a soft jelly (watch the video to see the consistency). Testing the jam’s consistency is a crucial step. To do this, take a spoonful of the mixture and place it on a cold plate. Allow it to sit for a moment before running your finger through it. If it holds its shape and doesn’t flood back together, you’ve achieved the perfect set. If it’s still too runny, continue cooking and testing every few minutes until you reach your desired consistency. This technique ensures that you create a beautifully textured jam that spreads easily on your morning toast.

Once your jam has reached the desired consistency, it’s time to jar it up. Ensure your jars are pre-washed and sterilised to avoid any contamination. Fill each jar while the jam is still hot, leaving a small space at the top for expansion. Seal them tightly and allow them to cool completely at room temperature. Once cooled, you can store your jars in a cool, dark place, or in the refrigerator if you plan on consuming them soon. Homemade jam can typically last for up to a year if stored properly, making it a great way to enjoy strawberries long after the summer has ended.

This made 4 small jars of jam.

Alongside the classic use of strawberry jam as a spread, there are numerous creative ways to incorporate it into your dishes. Consider using it as a topping for pancakes, waffles, or even porridge for a burst of flavour in your breakfast. You can also swirl it into yoghurts or use it as a filling for pastries and desserts, such as tarts or cakes. The possibilities are endless, and this jam will add a delightful sweetness to any meal.
