
When I was growing up in France there was a fairground every year in May, la foire de mai, and we always had some waffles there. I have not been able to find a decent recipe for years but finally managed it. This recipe is so similar to the waffles we use to buy in France. They are really nice warm with a little icing sugar but you can also put all sort of different toppings. It’s up to you and your imagination!
The kids love them for breakfast. If you have many too many, don’t worry as they will keep until the following day. To crips them up again, just put them in the toaster for a couple of minutes.

Ingredients
175g plain flour
1 tsp baking powder
2 tbsp sugar
300 ml milk
75g unsalted butter, melted
1 tsp vanilla
2 large eggs separated
Maple syrup, jam, fresh fruit, sweetened cream or ice cream to serve (optional)

Method
Place the flour, baking powder and sugar in a bowl. Make a well in the centre and pour in the milk, butter vanilla essence and eggs yolk. Gradually whisk into the flour (you should get a smooth batter)
Preheat the waffle maker or iron. In a large clean bowl, whisk the egg whites until soft peaks forms. Fold into the batter with a metal spoon.
Preheat the oven at 130c if you want to keep the waffle warm. Spoon a small ladleful of batter onto the hot iron, close the lid and bake until golden.
Serve immediately with your choice of topping or keep warm in the oven until all are ready.
