
Every time I make this recipe, it reminds me of the time I spend with my Aunt and Uncle. My aunt always made them for me whenever I visited. It’s probably the only place where I knew what I was going to eat every time I visited.
Oeufs à la neige or Snow Eggs is a typical French dessert, nowadays you can buy them ready made in a shop in France but they are not a nice. I don’t think you can buy them ready made in the United Kingdom.
I made these for some friends who came over to our house for lunch. They absolutely loved them. They never heard of them or tasted them before that day.
I still use the recipe cards I had when I was at school in France. It’s a fantastic set and has all the basic French recipes well explained but sadly you can no longer purchase them as they were part of the curriculum when I was at secondary school. My daughter uses some of the recipes and they always turn out perfectly.
It’s called “Precis methodique de cuisine by Edition Jacques Lanore.

You’ll need to make a crème anglaise (custard)
Ingredients
1/2 litre milk
Vanilla
75g sugar for the milk
3 eggs
25g sugar for the white
1 teaspoon of cornflour

Method
- Boil the milk
- Brake the eggs and separate the whites from the yolk. Reserve the yolks
- Beat the egg white into a firm meringue, add the 25g sugar
- Poach small amount of egg white in the milk (on simmer without boiling), turn them after a couple of minutes. When they are slightly firm, drain them in a sieve placed on a plate. Poach all the whites.
Make a crème anglaise
- Mix the sugar, vanilla and cornflour into the egg yolk,
- Bring the milk back to boil, I sieved it and made sure I had 1/2 a litre.
- Pour over the egg mixture
- Put back in the pan and warm until the first boil stirring all the time, make sure you don’t over cook the custard otherwise you’ll have scrambled eggs.
- Pour the cream into individual dishes says it will serve six but I only served 4 as we like larger portions.
- Put the eggs white on top and refrigerate for a couple of hours.
- This can be made the day before if kept in the refrigerator (covered)

OMG, this looks amazing! I’ve actually had snow eggs, but they seemed like they’d be so hard to make. They really aren’t!
No they are not hard to make, in fact you could do it today if you had all the ingredients
I’m getting so hungry just looking at this! I have never seen or heard of snow eggs before, and that’s a shame. However, life is going to be much better going forward.

Recipes like this are my favourite, quick and easy and uses things you mainly have at home. Perfect when you need a sweet treat.

Yes it does thicken to mousse like consistency

It is something unusual if you have never tried it. Most scales have both grams and ounces, there might be an option to change it
