We weren’t asked to review their food subscription, however, we were asked to trial out the feasibility of one of their many recipes found on their website.
I will provide you with more details on this further into the blog. For this review, we decided to try Aubergine Pasta, with Tomato and Asparagus recipe. I chose this as I am always looking for vegetarian dishes that we can add to our weekly meal plan. We try to eat veggie at least twice, sometimes three times per week.
So this recipe for me was a great find. Equally, it is made with Wholemeal Spaghetti, another plus for us as a family as we try to increase our wholemeal intake.


The Recipe and How it Worked
You can access the Aubergine Pasta, with Tomato and Asparagus recipe from HelloFresh’s website. Alternatively, there are many other cheap, quick and healthy recipes which you can try as well, you need to do is head to their website and click on their Recipe Hub to access a huge variety of recipes. The recipes are clearly marked into categories such as, World Cuisine, Low Calorie, Vegetarian etc. etc.
The choice is endless, in addition, they also mark the length of time it will take to cook, the number of calories per portion and the difficulty of the dish. It really is great. I had a hard time choosing which recipe to test but as previously mentioned we love a good veggie dish, and finding one that was a bit different, we went with this one!
This Wholewheat Spaghetti with Grilled Aubergine, Asparagus and Chilli, is described as a Balanced meal. It shows you that the prep time is around 15 minutes with a cook time of 20 min. The prep involved mainly chopping up the asparagus, aubergine, tomatoes and parsley. Due to the fact that the dish used a tin of tomatoes that already contained onion and garlic it meant that you didn’t have to prep these other two ingredients. I can confirm that this took me about 5-10 min.
The online recipe is unbelievably straightforward to follow, as it contains a step by step guide, with images of how to combat each stage of the cooking process. This meant it was hard to make a mistake. But like with all recipes you must follow the steps exactly if you want it to turn out as it shows on the images provided.

Getting back to the recipe, once I had chopped all the veg, I followed the guide on the site and it showed me that I could start adding some ingredients to the pan and at the same time on the baking try begin grilling the aubergine and plum tomatoes. Each step gave me timings and told me if I needed to sit partway through or not.
The only area where I had to guess was on the quality of oil to use in the cooking, I am a frequent cook, so I could guess, but someone not as familiar in the kitchen may appreciate an amount, for example, in this section use 1 tbsp of oil. But that being said this would be my only complaint on the whole recipe. Even down to the pasta and asparagus, you are provided with a time of when to cook the pasta and how much time to leave until the asparagus is added into the pan.
The dish was delicious. A perfect balance of flavour and freshness from all the vegetables it contained. The wholewheat spaghetti was particularly yummy too. We ate this as the recipe stated with a handful of flat leave parsley which also added a lovely earthy feel to the dish. What I found surprising is most of the time my children ask for cheese over virtually every type of pasta dish, but the flavours were so nice they never even mentioned it which means that we genuinely only had around 480 calories for each of our portions, which means this was an incredibly healthy meal.
So if you would like to try some new recipes this is the perfect place to do it, as the step by step process means its pretty much guaranteed to work as they say, and if you use the exact ingredients, its sure that you will only be eating the calorie intake that it states on the site for that meal. I will definitely be looking on their website again to spice up my midweek meals and add some healthy variety to our weekly plan as I LOVED IT! The recipe was so easy to follow, and made a super impressive meal!
