
I very often have some bread left and I don’t want to waste it. I do make bread and butter pudding and also ‘pain perdu” or as you call it in England – French toast or eggy bread but I have been looking for an alternative recipe for a while now. This recipe is from Alsace in the East of France and I thought I would try it out.
As usual, when I decided to make it, I did not have all the ingredients therefore I decided to change it and test it with other fruits.
I had a lot of berries in the freezer so I used 1kg of mixed berries instead of the apples. I did not add any raisins or kirsch as I did not think the combination would be good. I did add the spices.
I used stale bread but the recipe does say that you can also use stale brioche. I would expect it will be a more luxurious dessert.
I add some cream which was on the last day so I mixed cream and milk. I don’t think that will make much difference.
Because I used berries, I appear to have a very full tin. I am sure it will be fine but it may take a little longer to bake but I am sure it will taste really nice. I am sure you can adapt this recipe to suit you and use the fruit you like. I expect it would be really nice with peaches, apricots etc.

Ingredient
650g to 700g of stale bread or brioche
1kg apples
6 eggs
600ml milk
190g sugar
Vanilla
75g of raisins soaked in kirsch (the night before)
3 tbsp kirsch
2 to 3 tsp cinnamon
1 pinch of ginger powder
1 pinch of aniseed powder
Butter
26cm baking tin (round)

Method
Cut the bread in slices
Boil the milk with the vanilla
Pour over the bread and leave to absorb for 30mn
During the time, peel and slice thinly the apples
Mash the soften bread
Add to the bread the egg yolk, sugar, raisins, kirsch and spices and mix well
Add the slices of apples and mix again
Beat the eggs white (firm) and carefully add to the bread mixture
Put the mixture into a well buttered baking tin and bake for approx an hour in a pre-heated over at 180C
This could be served tepid (warm) or cold

Note: You could also vary this recipe by adding a mixture of 2tbsp of dried bread crumbs and 2 tsp cinnamon, evenly spread on the top and dot with butter before cooking the cake
