
This is a delicious chocolate cake. The recipe is from the set of cards I have from school in France. I have used them ever since, I think I was 11-years-old when they were purchased to use during the cookery lessons we use to have at school.
The cake is similar to a brownie without added nuts etc. It’s usually served as a dessert with either whipped cream or custard.
It does not rise much as there is no raising agent in the cake mix. The egg white is the key in this recipe. You need to ensure you do not over mix them with the cake mix.

Ingredients
4 eggs (separated)
150g sugar
150g dark chocolate (the recipe called for grated chocolate but I adapted the recipe)
150g butter
150g plain flour

Method
Pre-heat the oven at 180C
Melt the chocolate and the butter in a dish using the microwave (I use the defrost setting and it takes around 4 minutes but I do it in 2 minutes and repeat as needed). Do not overheat as the chocolate as it would burn. If there are some chocolate lumps, just mix it well and they will melt
Add the sugar, mix
Add the egg yokes, mix
Add the flour, mix
Beat the egg white to stiff peak
Add a third of the white to the cake dough to loosen it
Add the rest of the white ensuring you do not over mix
I used a savarin baking dish which has a hole in the middle (my tin was a little large but it worked anyway) but you can cook this cake in any type of baking dish you want.
Do not overcook the cake as it will be nicer and moist when slightly underbaked.
Bake at 180C for around 25 minutes (it took longer in my over, so check, it should have a slight dome when it’s cooked) test with a toothpick.
